Low/no shear mixers are those that move the liquids around at the same speed, they work to mix ingredients in the formula.
Low/no shear mixers do not disperse one phase of the emulsion into a phase with which it would normally not mix well, like an oil, and a water phase, like high shear does.
They can be used after the emulsion has formed to disperse and hydrate the rheology modifiers or throughout the emulsion process for some emulsifiers. Always check the instructions for the specific formula.
We can use this at the start of some emulsification processes or we might start with high shear and move to low/no shear, depending on the emulsifier.
